Henny Penny Operational Training - High Limit
The heating elements are kept separated by eight spreader bars, which need periodically realigned and tightened with a torque screwdriver set to 30 ft-lbs and a 5/16" socket.
The high limit is a device that shuts off voltage to the heating elements by sensing the temperature of the oil.
In the PFE-500 hybrid chicken fryer, it is a solid-state high limit capillary bulb that runs parallel to the heating elements on the front side of the fry pot. In the CFE 410/420 open potato fryer, it is vertical from the bottom of the fry pot. In both, it is held in place by a bracket that needs periodically tightened with a torque screwdriver set to 30 ft-lbs and a 3/8" socket.
The bulb of the high limit needs to be kept clean and undamaged. Excessive buildup can create a bridge between the bulb and heating element, causing false-positive readings. Dents or damage can also lower the trip point.
If the fryer displays an E-10 error code, it means the high limit has been tripped.
Turn the fryer off
Let the oil cool down, either in the fry pot or in the filter pan, before resetting the high limit
In the PFE-500, the reset is a red button on the underside inside the front door
In the CFE-410/420, the reset is a black rocker button directly under the control panel
If the high limit clicks every time you push it, it has gone bad and needs replaced.
Henny Penny Operational Training - Drain Switch
The drain switch tells the control that the drain valve is open.
An E-15 error code means the drain switch is open.
In the PFE-500, the drain switch is located directly behind the drain valve handles plate, behind the two screws on the left.
In the CFE 410/420, the drain switch is a lever pressed by the drain handle. Closing the drain handle too hard will bend the lever and cause issues.
Henny Penny Operational Training - Temperature Probe
The temperature probe reads the temperature of the oil and tells the control when to activate the heating elements to bring the oil up to the set point temperature.
The temperature probe should extend 3/4" into the fry pot.
The temperature probe is right next to the high limit, on the bottom side of the fry pot.
Henny Penny Operational Training - Troubleshooting
E-5 error code means the oil is too hot—around 405°F—according to the temperature probe.
E-6A error code means the probe connection might be loose.
E-6B error code means the probe is probably dented or broken.
E-10 error code means the high limit has tripped. Turn the fryer off and let the oil cool in the fry pot or filter pan for 20-30 minutes. False-positives can be caused by a dirty bulb.
E-15 error code means the drain switch is open.
E-25/26 error codes are related to amp sensors.
